Ingredients

4 ounces neufchatel cheese , softened or 4 ounces cream cheese
3 ounces frozen chopped spinach , drained and squeezed of all liquid ( optional )
1 green onion , chopped
1 teaspoon fresh dill weed , chopped
1 cup low-sodium parmesan cheese , shredded
1 tablespoon all purpose Greek seasoning or 1 tablespoon italian seasoning
1 teaspoon butter

Instructions

1.Preheat oven to 375 degrees F.
2.In a medium bowl mix together feta cheese, neufchatel cheese, chopped spinach, chopped green onion, and fresh dill weed. Set aside.
3.In a medium bowl mix together low-sodium parmesan cheese and all purpose Greek seasoning.
4.Line a baking sheet with parchment paper. Melt butter in a small bowl.
5.Spoon small amounts of the seasoned shredded parmesan cheese onto the baking sheet, spacing them about 2 inches apart. Flatten and shape the cheese into round frico cups using your fingers.
6.Bake frico cups for 8-10 minutes. Remove from oven and let cool for 1-2 minutes. Using a spatula, remove frico cups from baking sheet and gently press into a muffin tin to form cups. Let cool completely.
7.Once cooled, spoon the cheese mixture evenly among the 12 parmesan cups.
8.Bake the filled frico cups in the oven for 10-12 minutes.
9.Allow them to cool for 5 minutes, then serve them warm or at room temperature.
