Ingredients

2 1/4 cups water
1 1/2 cups bulgur , uncooked
1/4 - 1/3 cup fresh lemon juice
1 teaspoon salt
1 1/4 cups cooked chicken
1 1/4 cups cucumbers , chopped
1 cup tomatoes , chopped
1/2 cup fresh parsley
1/4 cup fresh basil
1/4 cup red onion , chopped
1/4 cup feta cheese , crumbled
1/8 cup olive oil
1/4 teaspoon black pepper
4 ounces black olives , sliced
Greek Bulgur Salad with Chicken is a refreshing and healthy dish, perfect as a side dish or a light meal on its own. This salad has a combination of different textures and flavors. Instructions

1.In a large pot, bring water to boil. Once boiled, turn off the heat and add in bulgur, salt and the lemon juice. Stir it well and cover the pot with a lid. Let it sit for 30-35 minutes at room temperature until fluffy.
2.In a large mixing bowl, combine cooked chicken, tomatoes, cucumber, parsley, basil, red onion, and black olives.
3.To make the dressing: In a small bowl whisk olive oil, black pepper and lemon juice.
4.Once the bulgur is done, fluff it with a fork and add it to the mixing bowl. Mix it well with the dressing.
5.Add the feta cheese and toss lightly.
6.Serve and enjoy your Greek Bulgur Salad with chicken!

PROS
