Ingredients

1 kg ripe tomatoes , peeled and sliced
1/2 kg potato , sliced
1/2 kg aubergine , sliced
1/2 kg courgette , sliced
3/4 of a cup olive oil
1 red onion , sliced
2 garlic cloves , finely chopped
2 tablespoons chopped parsley
salt & freshly ground black pepper
Greek Briam is a classic Mediterranean dish that is commonly served as an appetizer or side dish. Instructions

1.Preheat your oven to 392℉ (200℃).
2.Take a large baking tray with high edges, spread the potatoes out on the bottom and alternate with the courgettes and aubergines slices.
3.Place the tomato slices on top, distributing them evenly across the vegetables.
4.Sprinkle with salt and black pepper to taste, then pour olive oil evenly over the dish.
5.Add the sliced red onion and chopped garlic evenly on top of the olive oil.
6.Add chopped parsley to taste.
7.Cover the baking tray with aluminium foil and bake for 40 mins.
8.Remove aluminium foil, lower the oven temperature to 356℉ (180℃) and continue to cook for another 40 minutes.
