Ingredients

3 tablespoons olive oil
3 medium onions , sliced
2 medium carrots , diced
2 medium celery ribs , sliced
3 tablespoons chopped fresh parsley
2 teaspoons dill weed
2 tablespoons tomato paste
8 cups water
1 lb great northern bean , sorted , soaked overnight , rinsed , and drained
salt and pepper
2 tablespoons fresh lemon juice ( optional )
Fasoulada is a traditional Greek soup made with white beans, vegetables, and herbs. It's a hearty and filling soup that's perfect for a cold and rainy day or as a light lunch/supper. This recipe uses great northern beans, which are a bit smaller and creamier than other white beans. The soup is simmered with onions, carrots, and celery, which add flavor and texture to the dish. Fresh dill, parsley, and lemon juice add an herby and citrusy note to the soup, making it a refreshing and satisfying meal.

Instructions

1.In a large pot over medium-high heat, add olive oil and sauté the onions, carrots, and celery for about 5 minutes.
2.Add chopped parsley, dill weed, and tomato paste. Continue sautéing for another 2-3 minutes, until the tomato paste is fully incorporated.
3.Add water, beans, salt, and pepper.
4.Bring to a boil, then reduce heat and simmer uncovered for about 1 hour, until the beans are tender.
5.Add fresh lemon juice if desired and serve hot.
