250 g unsalted butter , very soft
1 1/2 cups olive oil
1/2 cup icing sugar
850 g plain flour , sifted
1 teaspoon vanilla
100 g slivered almonds , toasted
3 eggs
500 g extra icing sugar , for dusting

Instructions

1.Preheat the oven to 160°C/320°F.
2.In a large bowl, beat together the butter, olive oil, and icing sugar until creamy. Add the vanilla and eggs, one at a time, beating well after each addition.
3.Gradually add in the sifted flour, stirring until everything is well combined to form a soft dough.
4.Fold in the toasted slivered almonds, being careful not to over-mix.
5.Divide the dough into small portions and shape into round or crescent shapes.
6.Place on a baking sheet and bake for 20-25 minutes or until lightly golden brown.
7.Remove from the oven and allow to cool for just a few minutes before dusting with icing sugar.
