Ingredients

3 1/2 cups almond flour ( if you ca n't get the flour , grind almonds up fairly fine with a couple of tablespoonfuls of sugar an )
4 eggs , separated
1/2 teaspoon cream of tartar
1 1/2 teaspoons baking soda
1 1/2 cups honey ( greek thyme honey is excellent ! )
1 cup yoghurt ( go ahead , get the greek stuff )
1/2 cup blanched almond , coarsely chopped
4 tablespoons frozen orange juice concentrate
1 tablespoon fresh orange zest
1/2 cup butter
1/2 cup blanched slivered almond
1 1/2 cups honey ( yep , same stuff as you put in the cake )
1 1/2 cups orange juice

Instructions

1.Preheat the oven to 350°F (175°C). Grease a 10-inch (25cm) cake pan and line it with parchment paper.
2.In a large bowl, beat the egg yolks with the cream of tartar and baking soda.
3.Add the honey, yogurt, almond flour, orange juice concentrate, and orange zest, mix gently to combine.
4.In another bowl beat the egg whites with an electric mixer until stiff peaks form. Fold into the batter.
5.Pour the batter into the prepared pan, sprinkle with coarsely chopped almonds and bake for about 35 to 40 minutes or until a toothpick comes out clean when inserted in the center.
6.While the cake is baking, prepare the syrup. Melt butter in a saucepan, stir in honey and orange juice, boil for one minute and set aside to cool.
7.Remove the cake from the oven and while it is still hot, pour the cooled syrup evenly over the top.
8.Let the cake cool for 5 to 10 minutes, then carefully remove the cake from the pan. Serve at room temperature, garnished with slivered almonds if desired.
