2 pounds salmon fillet , bones removed
4 tablespoons coarse sea salt
3 tablespoons light brown sugar
1 tablespoon pepper
1 bunch fresh dill , chopped
3 tablespoons vodka

Instructions

1.Rinse the salmon fillet in cold water and pat it dry with paper towels.
2.Mix together the sea salt, brown sugar, and pepper in a small bowl.
3.Line a baking dish with plastic wrap, extending the wrap over the edges.
4.Place the salmon fillet skin-side down on the plastic wrap.
5.Sprinkle the salt mixture over the salmon and rub it in.
6.Sprinkle the chopped dill over the salmon.
7.Drizzle the vodka over the salmon.
8.Wrap the salmon tightly with the plastic wrap.
9.Place another baking dish on top of the wrapped salmon, and put a weight on top of the dish (such as a few cans of food).
10.Place the salmon in the refrigerator and let it cure for 24-48 hours.
11.After 24-48 hours, remove the weight and baking dish and unwrap the salmon.
12.Rinse the salmon fillet under cold water and pat it dry.
13.Slice the salmon thinly on a diagonal angle, and serve.
