3 1/2 lbs salmon , whole fillet and skin-on
1 tablespoon white peppercorns
2 tablespoons coriander seeds
1/2 cup granulated sugar
1/3 cup sea salt
2 ounces dill , chopped ( for the cure )
Gravlaks is a traditional Scandinavian dish that has been enjoyed for centuries. It is made by curing salmon with a mixture of salt, sugar, and spices, then serving it thinly sliced and garnished with fresh dill. Gravlaks is often served as an appetizer or as part of a traditional Scandinavian smorgasbord, and it pairs well with a crisp white wine. Instructions

1.Rinse the salmon fillet under cold water and pat it dry.
2.Combine the peppercorns, coriander seeds, sugar, and sea salt in a small bowl.
3.Spread half of the dill on the bottom of a large dish, then place the salmon on top.
4.Rub the spice mixture all over the salmon, making sure to coat it evenly.
5.Cover the dish tightly with plastic wrap, then weigh the salmon down with a heavy object.
6.Refrigerate for at least 24 hours, turning the salmon halfway through and basting it with the liquid that accumulates in the dish.
7.After 24 hours, remove the salmon from the dish, rinse it under cold water, then pat it dry with paper towels.
8.Finely chop the remaining dill and sprinkle it over the salmon.
9.Slice the gravlaks thinly, diagonally, and serve chilled or at room temperature.
