Ingredients

1 lb salmon fillet ( skin on , one piece )
fresh dill ( a lot )
1/2 teaspoon fresh ground pepper
1 teaspoon sugar
3 teaspoons kosher salt
3 teaspoons white wine
Gravad Laks, also known as Gravad Lax, Gravlax, Grav Lax, or Gravlaks, is a traditional Scandinavian dish of cured salmon. The curing process involves packing salmon fillets in a blend of salt, sugar, dill, and other herbs and spices to slowly cure the salmon. This results in a deliciously flavorful and tender salmon that can be eaten sliced thinly on its own, on top of crackers, or as the centerpiece of a party platter.

Instructions

1.Rinse the salmon fillet with cold water and pat dry with a paper towel.
2.Set the salmon fillet skin side down on parchment paper inside a baking dish.
3.In a bowl, mix together the salt, sugar, and pepper.
4.Cover the salmon completely with the mixture.
5.Drizzle the white wine over the salt mixture.
6.Cover the salmon with fresh dill stems, pressing down firmly.
7.Cover the dish with plastic wrap, then place another dish on top to weigh the salmon down.
8.Refrigerate the dish for 24-48 hours, flipping the salmon and basting it with the liquid every 12 hours.
9.Once the salmon is cured, remove it from the dish and discard the liquid and dill.
10.Scrape off any remaining seasoning with a knife and slice the salmon thinly.
