6 ounces macaroni
1 tablespoon olive oil
1 leek , sliced and washed
8 slices bacon , smoked , chopped
12 ounces cheese sauce , bought
1 tablespoon parmesan cheese , grated
2 bunches cherry tomatoes , on the vine

Instructions

1.Preheat the oven to 200C/400F/gas mark 6.
2.Cook the macaroni in a large pan of boiling salted water for 8–10 minutes, or as directed on the packet, until just tender. Drain well.
3.Heat the oil in a large frying pan. Add the sliced leek and bacon and cook over a medium heat, stirring occasionally, for 8–10 minutes until the leek is soft and the bacon cooked.
4.Pour over the cheese sauce and stir to mix well.
5.Stir in the cooked macaroni and transfer the mixture to a 1.5 litre/2½ pint shallow ovenproof dish.
6.Scatter over the grated Parmesan and arrange the cherry tomatoes on top with the vines. Bake for 20–25 minutes until golden-brown and bubbling. Remove from the oven and serve at once.
