3/4 pint cold brewed tea
12 ounces sugar
4 ounces apricots , chopped
1 1/4 lbs dried fruit
1 egg , beaten
2 cups self-raising flour ( heaped cups )

Instructions

1.Preheat your oven to 160°C and grease a large loaf tin.
2.In a large mixing bowl, add the cold brewed tea and sugar, then mix until the sugar has dissolved.
3.Add the chopped apricots, dried fruit, beaten egg, and self-raising flour to the mixing bowl. Mix well until all of the ingredients are combined.
4.Pour the mixture into the prepared loaf tin and bake for 1 hour and 45 minutes, or until a skewer inserted into the center of the loaf comes out clean.
5.Once the fruit loaf is finished cooking, remove it from the oven and let it cool in the tin for 10 minutes before removing and transferring it to a wire rack to cool completely.
