2 -3 lbs cottage cheese , uncreamed works best , but no ricotta
1/4 cup sultanas or 1/4 cup raisins
3 egg whites
4 tablespoons sugar
1 egg yolk
1 tablespoon water

Instructions

1.Preheat oven to 350°F (180°C). Grease a 10-inch (25 cm) springform baking pan.
2.Mix together flour and baking powder in a small bowl.
3.In a separate bowl, using an electric mixer, cream together sugar, egg yolks, water/milk, and butter until fluffy.
4.Gradually beat in the flour mixture.
5.Pour the mixture into the prepared pan, spreading the batter evenly.
6.Prepare the vanilla pudding according to the package directions using 1 and 1/2 cups milk and 1/4 cup sugar.
7.Add lemon extract/bitter almond extract, cottage cheese, and sultanas/raisins to the pudding. Mix well.
8.Using clean beaters, whip the egg whites in a separate bowl until stiff peaks form.
9.Gradually beat in 4 tablespoons of sugar until the egg white mixture is thick and glossy.
10.Fold in the egg yolk and water.
11.Pour the mixture over the pudding layer and spread it evenly.
12.Bake the cheesecake for 55-60 minutes until it is lightly browned on top. Cool the cake completely before removing it from the pan.
