5 1/2 - 6 cups all-purpose flour , sifted
1 1/2 cups seedless raisins
1 cup citron , diced
1/2 cup candied cherry , sliced
2 tablespoons butter , melted
2 tablespoons sugar

Instructions

1.In a large mixing bowl, combine the warm water, yeast, sugar, salt, and softened butter until thoroughly mixed.
2.Add the eggs, egg yolk, and 3 cups of sifted flour. Mix well and stir in the remaining flour until the dough is smooth and elastic.
3.Knead the dough for 8-10 minutes or until it becomes soft and pliable.
4.In a separate bowl, combine the raisins, citron, and candied cherries. Add 1/4 cup of flour and mix well.
5.Add the fruit mixture to the dough and knead until it is evenly distributed.
6.Grease a panettone mold and place the dough inside. Let it rise for 2-3 hours until it is doubled in size.
7.Preheat the oven to 350°F. Mix the egg white with the melted butter and sugar. Brush the top of the dough with the mixture.
8.Bake for 45-50 minutes or until the top is golden brown. Let it cool for at least 10 minutes before serving.
