4 cups Italian bread ( somewhat stale , but not rock hard )
1 can tomatoes with basil
1 can pitted black olives , drained roughly chopped
1/2 cup locatelli cheese , finely grated
6 -7 canned anchovy fillets , mashed or 6 -7 about 2 1/2 tsp anchovy paste
1 teaspoon garlic , minced
1/4 cup fresh basil , chopped
1/4 cup fresh parsley , chopped
1/2 teaspoon black pepper ( freshly ground )
additional salt and pepper
oil ( for frying )

Instructions

1.Remove the tops from the peppers and empty the seeds and membranes.
2.In a large bowl, combine the bread, canned tomatoes, chopped olives, locatelli cheese, mashed anchovy fillets or paste, garlic, fresh basil, fresh parsley, black pepper, and salt and pepper to taste.
3.Spoon the bread mixture into each of the peppers, filling them about 3/4 of the way.
4.Heat oil in a large skillet over medium-high heat and fry the stuffed peppers until they are golden brown and tender.
