Ingredients

1 lb Italian pork sausage
4 garlic cloves , finely minced
2 stalks celery & leaves , chopped
8 ounces baby carrots
1 large yellow onion , peeled and chopped
7 cups vegetable broth or 7 cups chicken stock
1 package dry lentils
1 can diced tomatoes
1 bay leaf
1 teaspoon dried basil
1 teaspoon dried oregano
1 cup good white wine
2 1/2 teaspoons italian seasoning salt
1/4 teaspoon fresh ground black pepper
shredded parmesan cheese ( to taste ) ( optional )

Instructions

1.In a large pot, cook Italian sausage and garlic over medium heat for 5-7 minutes or until the sausage is browned, stirring occasionally.
2.Drain any excess fat.
3.Add celery, carrots, and onion and cook for 5 minutes or until vegetables are tender, stirring occasionally.
4.Stir in vegetable broth, lentils, tomatoes, bay leaf, basil, oregano, Italian seasoning, salt and pepper.
5.Bring to a boil then reduce heat to low and let simmer, partially covered, for 45-50 minutes or until lentils are tender.
6.Stir in white wine and continue cooking for an additional 10 minutes.
7.Discard bay leaf and serve with shredded parmesan cheese if desired.
