Ingredients

1 medium leek

1 1/2 cups half-and-half or 1 1/2 cups evaporated milk
1 1/2 cups swiss cheese ( shredded )
4 eggs
2 tablespoons brandy
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg

Instructions

1.Preheat oven to 375 degrees F.
2.Cut white and light green parts of leek lengthwise into quarters, then crosswise into 1/2-inch pieces. Rinse well.
3.In a 12-inch skillet, melt butter over medium heat. Add leek and cook 5 minutes or until lightly browned, stirring occasionally.
4.Stir in chicken and cooked spinach (or broccoli) until well combined. Sprinkle flour over chicken mixture in skillet. Cook 1 minute or until flour is absorbed, stirring constantly.
5.Gradually stir in half-and-half (or evaporated milk). Heat to boiling. Remove from heat and stir in cheese, eggs, brandy, salt, pepper and nutmeg.
6.Pour mixture into pie crust.
7.Bake quiche in preheated oven for 40 to 45 minutes or until a knife inserted in center comes out clean.
