Instructions

1.Preheat oven to 150C (302F)
2.In a bowl, beat egg whites until soft peaks form.
3.Gradually add caster sugar, beating well after each addition until meringue is thick and glossy.
4.Sift cornflour over the meringue.
5.Add vinegar, then fold mixture until just combined.
6.Line a baking tray with baking paper, and spoon mixture onto the tray, smoothing out with a spatula and shaping to create an edge.
7.Bake for 10 minutes. Then reduce the oven temperature to 120C (248F) and continue baking for 1 1/4 hours or until meringue is dry to the touch and the edges are crisp. Turn off oven and allow the pavlova to cool completely inside the oven.

9.Cook, stirring constantly, over low heat until mixture thickens and boils.
