Grand Overstuffed Italian Breakfast Calzones are a great way to start your day on a hearty note. Loaded with flavorful ingredients like Italian sausage, scrambled eggs, mozzarella cheese, blue cheese, fresh parsley, and green onions – these calzones are perfect for those who enjoy a savory breakfast. The biscuit dough is flaky and buttery, which pairs perfectly with the savory filling. These calzones can be customized easily to fit within your dietary restrictions, but are best enjoyed in moderation as part of a balanced diet.

Instructions

.Preheat the oven to 375°F.
.Peel and diced the potato. Boil the diced potatoes in a medium pot of water for about 10 minutes, or until tender. Drain the potatoes and set them aside to cool.
.In a large skillet, cook the Italian sausage, breaking it up into small pieces with a spatula, for about 8 minutes over medium heat, or until browned and cooked through. Drain any excess fat.
.In a small bowl, whisk together the eggs and milk. Add 1 tablespoon of butter to the same skillet used for cooking the sausage. Once melted, add the egg mixture to the skillet. Cook, stirring constantly for about 3 minutes, or until scrambled and no longer runny. Remove the skillet from the heat.
.Open the can of Pillsbury Grands and separate each biscuit into two halves. Flatten each half into a thin disc using your hands or a rolling pin.
.On each flattened biscuit, place about 1/4 cup of the shredded mozzarella cheese, followed by some cooked sausage, scrambled eggs, crumbled blue cheese, diced potatoes, salt, and freshly ground black pepper to taste.
.Fold each biscuit in half, being careful to seal the edges with your fingers – it should resemble a semi-circle shape. Use a fork to crimp the edges and create a design in the dough.
.Brush the tops of the calzones with the remaining 2 tablespoons of melted butter and sprinkle with some fresh parsley and chopped green onions.
.Bake the calzones in a preheated oven for 15-18 minutes or until golden brown. Serve hot or warm.
