8 white potatoes , peeled and cut into cubes
1 large onion , chopped
2 teaspoons white sugar
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/4 cup cider vinegar , divided
1 pinch ground black pepper
1/4 cup vegetable oil

Instructions

1.In a large pot, bring the potatoes to a boil in salted water. Cook until tender, for about 10 minutes.
2.In a skillet, cook onion in oil until tender.
3.Add 2 tbsp vinegar, sugar, dry mustard, salt and pepper to the skillet. Bring to a boil over medium heat, stirring occasionally.
4.Drain the potatoes and return to the pot.
5.Add the onion mixture and remaining vinegar to the pot. Gently stir until all ingredients are combined.
