2 ( .25 ounce ) packages instant yeast
1 cup lukewarm water
1 quart warm water
1 tablespoon salt
1 teaspoon ground ginger
2 tablespoons white sugar
1/2 cup fennel seed
1/3 cup unsulfured molasses
1 tablespoon melted butter
2 cups rye flour
1 1/2 cups golden raisins
9 cups bread flour

Instructions

1.Dissolve yeast in 1 cup lukewarm water in a small mixing bowl. Set aside to proof.
2.In a large mixing bowl, combine the remaining ingredients (except the bread flour and golden raisins).
3.Add the proofed yeast to the mixing bowl, stirring until evenly mixed. Add 1 cup of bread flour at a time, mixing well after each addition.
4.Knead the dough on a floured surface until smooth and elastic. Place in a greased bowl and let it rise in a warm place for 2 hours.
5.Punch down the dough and knead in the golden raisins. Divide the dough into 3-4 equal parts and shape into loaves. Place in greased loaf pans, cover, and let rise for 1 hour.
6.Bake at 350°F (175°C) for about 1 hour or until the bread sounds hollow when tapped. Brush with melted butter, let cool, and serve.
