Smothered steak is a Southern classic that has been enjoyed for generations. This dish is named after Grace Love, who was known for her delicious and hearty meals. Smothered steak is made by searing a steak and then cooking it in a flavorful mixture of onions, bell peppers, and mushrooms until the steak is tender and covered in a rich, savory sauce. This dish is typically served with a side of rice, mashed potatoes, or cornbread.

Instructions

.Preheat the oven to 350°F (175°C).
.Mix together the spice rub ingredients in a small bowl. Rub the mixture all over the steak, making sure it's covered on both sides.
.Heat the olive oil in a large skillet over medium-high heat.
.Once the skillet is hot, add the steak and sear until it's browned on both sides, about 3-4 minutes per side.
.Remove the steak from the skillet and set it aside on a plate.
.Add the onions, bell peppers, mushrooms, and water to the skillet. Cook until the vegetables are tender, about 8-10 minutes.
.Return the steak to the skillet, nestling it into the vegetables.
.Cover the skillet with a lid or aluminum foil and bake for 1-1 1/2 hours, until the steak is tender and the vegetables are caramelized.
.Remove the steak from the skillet and let it rest for 5 minutes before slicing against the grain. Serve the steak with the vegetables and pan drippings.
