Ingredients

2 Asian bitter melon ( goya )
kosher salt as needed
2 tablespoons sesame oil
1 pork loin , cut into pieces
1 pinch garlic salt , or to taste
1 pinch garlic pepper , or to taste
2 eggs
1 tablespoon soy sauce , or to taste
Goya Champuru, also known as bitter melon stir fry, is a traditional dish from Okinawa, Japan. Bitter melon or goya, the main ingredient of this dish, is known for its medicinal properties and unique flavour. Instructions

1.Cut the goya lengthwise and remove seeds. Slice into thin semi-circles and sprinkle with kosher salt. Let stand for 10-20 minutes to remove any bitterness. Rinse well with water and squeeze out any excess liquid.
2.Heat sesame oil in a frying pan on medium heat. Add the pork and sprinkle garlic salt and pepper. Fry until brown.
3.Add sliced goya and soy sauce. Stir fry for a few minutes until the goya is softened.
4.Beat two eggs in a bowl and pour over the stir fry. Mix and cook until the eggs are scrambled.
5.Serve hot over rice or noodles.
