Ingredients

1 1/2 lbs turkey tenderloins , sliced into 3/4-inch thick scallops
1 cup flour
1 tablespoon salt

2 eggs , lightly beaten
1/4 cup milk
2 cups dried breadcrumbs
2 tablespoons ground flax seed
1/2 teaspoon dried oregano
1/2 cup olive oil
1/2 cup marinara sauce
1/2 cup parmesan cheese , freshly grated
1/2 lb mozzarella cheese , sliced
fresh parsley
5 cups cooked spaghetti or 5 cups linguine

Instructions

1.Make a breading station by combining flour, salt, and pepper in a shallow dish. Beat eggs with milk in another shallow dish. Combine breadcrumbs, flax seed and oregano in a third shallow dish.
2.Dip turkey scallops in flour, then in egg mixture, then breadcrumb mixture, pressing the crumbs to adhere well.
3.Heat olive oil in a large skillet over medium heat. Add breaded turkey scallops in a single layer and cook for about 3 minutes on each side, until nicely browned and cooked through.
4.Preheat the broiler. Spread cooked spaghetti or linguine on the bottom of a 9 by 13-inch baking dish. Spoon marinara sauce over the spaghetti or linguine.
5.Arrange the scalloped turkey over the sauce and sprinkle with Parmesan cheese. Place the sliced mozzarella cheese over the turkey. Broil for 2-3 minutes, or until the cheese is melted and bubbly. Garnish with fresh parsley before serving.
