Ingredients

2 small eggplants
1/2 cup breadcrumbs
1 large tomatoes , seeded , and chopped
1/4 cup dry white wine
1/2 lb small bay scallop
10 baby portabella mushrooms , chopped
1 cup low-fat ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup parmesan cheese , and asiago grated cheese blend
1 bunch fresh oregano , chopped
1 bunch fresh basil , chopped
4 garlic cloves , minced ( use more or less depending on your taste )
1 small onion , finely chopped
1/4 cup olive oil
2 tablespoons olive oil
salt and pepper

Instructions

1.Preheat the oven to 375°F.
2.Slice the eggplants in half lengthwise, scoop out the flesh and chop it finely. Keep the shell intact.
3.Heat the olive oil in a pan, add onion and garlic and sauté until tender.
4.Add chopped eggplant and mushrooms to the pan and sauté until tender.
5.Add scallops, tomatoes, breadcrumbs, wine, oregano, and basil, and cook for a few more minutes until scallops are cooked.
6.Remove from heat and mix in the three cheeses.
7.Stuff the eggplant halves with the mixture and sprinkle some salt and pepper on top.
8.Bake in the preheated oven for 45-50 minutes until eggplant is golden brown on the top.
9.Serve it while hot.
