4 center split deli rolls
12 dill pickle slices
1 onion , chopped

Instructions

1.Preheat your oven to 300°F.
2.Line a large baking sheet with aluminum foil.
3.In a small bowl, mix together the salt, brown sugar, cumin, chili powder, cayenne, coriander, mustard powder, onion powder, garlic powder, fennel seeds, cinnamon, and nutmeg.
4.Remove the silver skin from the underside of the ribs.
5.Rub the spice mixture all over the ribs and wrap tightly with aluminum foil.
6.Place the ribs on the prepared baking sheet and bake for 2.5 hours.
7.Remove the ribs from the oven, discard the foil, and brush the barbecue sauce over the entire rack.
8.Increase the oven temperature to 400°F and return the ribs to the oven for an additional 10-15 minutes, or until the sauce is caramelized and sticky.
9.Allow the ribs to rest for 10 minutes before slicing them into strips.
10.Toast the deli rolls.
11.Assemble the sandwiches by placing a strip of rib meat on each roll, topping with onion and pickle slices, and adding additional barbecue sauce as desired.
12.Serve the sandwiches immediately.
