2 lbs cooked roast beef , sliced � inch thick
chopped fresh chives or dried chives ( optional )
chopped fresh parsley or dried parsley ( optional )

Instructions

1.In a small bowl, mix vinegar, Dijon mustard, salt and pepper.
2.Gradually whisk in olive oil until smooth.
3.In a large bowl, toss onions with 1/3 cup of the dressing.
4.Then, toss the beans with 1/4 cup of the dressing.
5.Cook potatoes and toss with hot beef bouillon and 1/4 cup dressing. Let it cool.
6.Arrange potatoes on top of onions on a serving platter.
7.Place cooked roast beef and beans in the same bowl( used for onion) and toss with remaining dressing.
8.Pile roast beef and beans on top of the potatoes.
9.Sprinkle with chives and parsley.
