50 g piece gruyere
150 g grated gruyere
75 g butter , plus a bit more for the pan
120 g flour
3 large eggs
1/2 teaspoon salt

Instructions

1.Preheat the oven to 200°C and butter a baking sheet.
2.Over medium-high heat, melt the 75g butter in a pot with 250ml water and the salt. Once boiling, add the flour and stir the mixture on the heat until it begins to come together into a thick ball.
3.Remove the pot from the heat and add the eggs one by one, mixing quickly to incorporate each egg into the dough.
4.Grate the 50g piece of gruyere cheese and mix it together with the grated gruyere cheese into the dough.
5.Drop spoonfuls of the dough onto the prepared baking sheet and bake for 20-25 minutes, or until the gougères are puffed up and golden brown.
