3 3/4 cups sifted white flour
2 cups vegetable fat
1 cup sugar
1/2 cup water
1 cup powdered sugar
1/2 teaspoon cardamom
1/3 cup ground pistachio nut
Gosh i Fil or Elephant's Ears is a traditional Middle Eastern dessert. It is often served in ceremonies and special occasions in Iran. The recipe does not use yeast or baking powder; instead, the dough is made with eggs, milk, and flour. The dough is then deep-fried in vegetable fat and served with a sweet syrup drizzled on top. The Gosh i Fil – Elephant's Ear name comes from the shape of the pastry, which resembles elephant's ears. This light and crispy pastry is a delightful treat that can be enjoyed by all ages.

Instructions

1.Beat the eggs with salt and sugar until light and fluffy.
2.Add vegetable oil and milk; then sift the flour a little at a time into the mixture.
3.Stir until well combined and the batter is smooth; let it sit for two hours in a warm place.
4.Heat the vegetable fat in a frying pan until it reaches 375°F.
5.Use a ladle to pour some batter into the hot oil; fry until golden brown.
6.Remove the cooked Gosh i Fil from the pan and place on a paper towel to drain off the excess oil.
7.To make the syrup, combine water and sugar in a saucepan and bring to a boil.
8.Add powdered sugar and cardamom, stir until well combined.
9.Arrange Gosh i Fil on a serving plate and drizzle the syrup on top.
10.Garnish with ground pistachio nuts.
11.Serve the Gosh i Fil – Elephant's Ear with tea or coffee.
