Gorky's Cafe Golabki, or Stuffed Cabbage, is a popular dish in Central and Eastern European cuisine. It is a hearty and warming dish that is perfect for a cold winter evening. Traditionally, small cabbage leaves were filled with a mixture of minced meat, rice, and onions and then simmered in a tomato sauce. At Gorky's Cafe, the chef has adapted the recipe to create a larger version that is perfect for a family-style dinner.

.Boil large pot of salted water.
.Core the large cabbage and insert into boiling water for about 2 minutes.
.Remove cabbage, rinse with cold water, and let drain.
.Cut leaves from cabbage and set aside any that are too small to roll.
.In a large bowl, combine the ground beef (or for a vegetarian version, cooked bulgar or cooked buckwheat), rice, eggs, onion, carrot, salt, and pepper to taste.
.Place filling in cabbage leaves and roll tightly.
.Place rolls seam side down in a baking dish.
.Combine the tomato sauce, water, brown sugar, and vinegar, and pour over rolls.
.Cover with foil and bake for 2 hours.
