Ingredients

1/4 cup walnuts
1 shallot , peeled and quartered
4 ounces white cheddar cheese , cut in 1/2 cubes
6 ounces gorgonzola or blue cheese , cut in 1/2 inch slices
4 ounces light cream cheese , softened and , cut in 1/2 inch slices
1/4 cup butter or 1/4 cup margarine
2 tablespoons milk
1 teaspoon Worcestershire sauce

Instructions

1.Preheat oven to 350 degrees F.
2.Place the walnuts on a baking sheet and toast in the oven for 10-12 minutes or until fragrant.
3.In a food processor, chop the walnuts until they are very finely ground. Remove and reserve.
4.In the same food processor, chop the shallot until it is very finely chopped.
5.In a mixing bowl, combine the white cheddar cheese, gorgonzola or blue cheese, light cream cheese, butter or margarine, milk, and Worcestershire sauce. Mix until well combined.
6.Fold in the chopped shallot and toasted walnuts until well combined.
7.Pack into a container or small crock and chill until firm before serving.
