Ingredients

5 1/4 ounces dark chocolate ( at least 60 % cocoa solids )
2 free range organic egg yolks
1 3/4 ounces caster sugar
4 3/4 ounces double cream
3 tablespoons milk
1 3/8 ounces white chocolate ( broken up )
1 1/4 ounces corn flakes ( or Pompadour Ice Cream Fan Wafers , found on line at britishfooddirect.com )
1 ripe mango
toasted slivered almonds , for scattering

Instructions

1.Melt the dark chocolate in a double boiler or a heatproof bowl set over a pot of simmering water. Stir until smooth.
2.In a medium bowl, whisk together the egg yolks and caster sugar until the mixture is light and creamy.
3.Heat the double cream and milk together in a medium saucepan until it comes to a boil, stirring constantly.
4.Slowly pour the hot cream mixture over the egg mixture while whisking constantly. Keep whisking until the mixture is smooth and well combined.
5.Pour the mixture back into the saucepan. Cook over low heat, stirring constantly, until it has thickened and coats the back of a spoon.
6.Remove from the heat and stir in the melted dark chocolate. Mix well until smooth.
7.Pour the mixture into four serving ramekins.
8.Chill the ramekins in the fridge for at least 2 hours or until set.
9.Just before serving, melt the white chocolate in a double boiler or a heatproof bowl set over a pot of simmering water. Stir until smooth.
10.Crush the corn flakes gently with your fingers and sprinkle them over the top of the chocolate velvet.
11.Peel and dice the ripe mango. Scatter the diced mango and toasted slivered almonds over the corn flakes.
12.Drizzle the melted white chocolate over the top of the mango and almonds. Serve immediately.
