Gorditas Infladas are a popular street food in Mexico. These delicious bites are crispy on the outside and soft on the inside, filled with savory black beans and topped with tangy salsa, cheese, and fresh veggies. The gorditas are made with fresh corn masa or masa harina, which is the dough used to make tortillas. The dough is stuffed with a flavorful black bean paste, then fried until it is puffy and golden brown. Gorditas Infladas are perfect as an appetizer or a small snack.

Instructions

1.Mix the cooked black beans with avocado leaves, and salt to taste in a food processor or blender until a thick paste forms.
2.In a large mixing bowl, combine the fresh corn masa or masa harina mixture with warm water. Knead the mixture until it forms a smooth dough.
3.To make the gorditas, take a small amount of dough and form a small ball. Use your hands to flatten the ball, making a small depression. Fill the depression with a spoonful of the black bean paste, then pinch the edges closed to form a stuffed ball.
4.Heat oil in a large skillet over medium-high heat. Once hot, fry the gorditas until they are golden brown and puffy.
5.Serve the gorditas with salsa, cheese, pickled onions, and sliced radishes on top.
