Ingredients

600 g red gooseberries
200 g super gelling sugar ( Dr. Oetker 's , see note )
5 cardamom pods
1 teaspoon vanilla extract
1 tablespoon lime juice

Instructions

1.Rinse gooseberries and dry them with a towel. Discard stems and blossom ends.
2.Crush cardamom pods in a mortar or spice grinder and remove husks.
