Ingredients

3 boneless skinless chicken breasts ( about 16 ounces )
2 teaspoons oil
1 medium onion , sliced 1/4 inch thick
1 poblano pepper
2 tablespoons butter
3 cloves garlic , minced
2 cups mushrooms , sliced
8 ounces frozen whole kernel corn
1 quart water
1 lb process American cheese , cut into cubes
4 tablespoons cornstarch
salt & freshly ground black pepper

Instructions

1.Preheat oven to 375 degrees F.

14.In a small bowl, whisk together the cornstarch and 4 tablespoons of water.
15.Slowly stir the cornstarch mixture into the soup.
16.Simmer the soup for 10-15 minutes or until it has thickened and the chicken is cooked through.
