Ingredients

1 can cling peach halves
3/4 cup sugar
2 envelopes gelatin , unflavored
3 eggs , separated
1/4 teaspoon salt
1 1/2 cups nonfat milk or 1 1/2 cups low-fat milk
3 cups ricotta cheese
3 tablespoons lemon juice
2 teaspoons orange rind , grated
1/2 teaspoon lemon , rind of , grated
1 teaspoon vanilla gingersnaps

Instructions

1.In a food processor, blend the peach halves with 1/4 cup of the sugar until smooth.
2.In a small bowl, sprinkle the gelatin on 1/4 cup cold water; let stand for 5 minutes.
3.In the top of a double boiler over barely simmering water, beat the egg yolks with the remaining 1/2 cup sugar and the salt until thick and pale yellow. Beat in the milk. Cook, whisking constantly, until the mixture thickens enough to coat the back of the spoon, about 8 minutes. Remove from heat.
4.Add the gelatin mixture to the hot milk mixture and whisk to dissolve. Stir in the ricotta, lemon juice, orange and lemon rinds, vanilla, and peach puree. Mix well.
5.In a separate bowl, beat the egg whites until stiff but not dry. Fold into the ricotta mixture until just blended.
6.Pour the cheesecake mixture into a well-greased 10-inch springform pan. Refrigerate for at least 5 hours or overnight.
7.Crush the gingersnaps and sprinkle on top of the cheesecake before serving.
