1 cup orange juice , low pulp ( I prefer to squeeze my own )
1 cup white wine ( plus one glass for the cook )
10 kumquats
5 jalapenos or 5 serrano peppers
2 cups cooked rice

Instructions

1.Preheat oven to 375°F. Line a baking dish with aluminum foil.
2.Add orange juice and white wine to the baking dish.
3.Slice the kumquats and peppers. Spread them around the baking dish.
4.Season tilapia fillets with salt and pepper. Then place the fillets on top of the kumquats and peppers.
5.Bake for 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.
6.Serve over cooked rice.
