Ingredients

1 large cabbage , with big leaves , core removed
175 g long grain rice
50 g butter
2 large onions , peeled and minced
450 g mushrooms ( canned or fresh )
5 ml Worcestershire sauce ( optional )
5 ml salt
2 ml pepper
5 ml garlic powder
9 ml sweet paprika
1 ml parsley
1 1/2 1 1/2 liters vegetable stock or 1 1/2 liters mushroom stock
6 -9 ml sweet paprika
Golabki is a traditional Polish recipe that is made of tender cabbage leaves that are wrapped around a filling of rice, meat, and other ingredients. In this vegetarian version, mushrooms have been used instead of meat. The dish is often served with tomato sauce or sour cream, but the mushroom sauce is a great addition for a vegan version. This dish is usually enjoyed as the main course but can also be served as a side dish. The satisfaction of enjoying a home-cooked meal that is healthy and filling makes it a great choice for a family dinner or a dinner party.

Instructions

1.Start by preheating the oven to 180°C.
2.In a large pot, bring water to a boil and add the whole cabbage. Cook until the outer most layer is tender enough to roll, remove it, and repeat until all leaves are removed. Trim the thick part from the center of leaves.
3.Cook rice according to package instructions and set aside.
4.In a large skillet, melt butter and sauté onions until translucent. Add minced mushrooms and sauté until cooked.
5.Add Worcestershire sauce, salt, pepper, garlic powder, sweet paprika, and parsley to the skillet and stir until well combined.
6.Add the rice to the skillet and stir until well incorporated. Allow this mixture to cook for about 5 minutes until the rice and mushroom mixture is fragrant.
7.Once the mixture is ready, spread a cabbage leaf onto a flat surface with the smooth side down. Add 1-2 spoonfuls of the rice and mushroom mixture on the center of the leaf and roll into a tight bundle.
8.Repeat this process until you have exhausted your leaves and the stuffing mixture.
9.Pour the vegetable or mushroom stock into a baking dish and sprinkle sweet paprika all over the stock.
10.Place the stuffed cabbage rolls seam side down and cover with a lid or aluminum foil, and bake for about 30-45 minutes.
11.Remove the lid or aluminum foil and continue baking for about 20-30 more minutes until the cabbage has softened and everything inside has cooked thoroughly.

PROS
