Ingredients

1/2 pound pork tenderloin , cut into thin strips
1/2 pound prawns , peeled and deveined
1/4 pound rice vermicelli noodles
1 bunch fresh cilantro , leaves picked from stems
5 spring onions , cut in half
1/4 cup fresh mint leaves , or more to taste
1/4 head romaine lettuce , cut into bite-size pieces

Instructions

1.Cook the pork and prawns in a pot of boiling water until just cooked, then remove and set aside.
2.Cook the rice vermicelli noodles according to package instructions, then rinse under cold water and set aside.
3.Clean and chop the cilantro, spring onions, and mint leaves and set aside.
4.Dip one rice paper wrapper into a bowl of warm water for about 5 seconds or until it softens.
5.Lay the softened wrapper onto a flat surface and add a piece of lettuce, a small handful of rice vermicelli noodles, some pork and prawns, and a little bit of each herb in the center of the wrapper.
6.Roll up the bottom of the wrapper over the filling, then fold in the sides and continue rolling until the wrapper is completely wrapped around the filling.
7.Repeat with the remaining ingredients until all the filling is used up.
