Ingredients

3 cups dusting whole wheat flour ( atta )

2 tablespoons ghee , to shallow fry
1 medium cauliflower
1/2 bunch fresh coriander leaves
2 -3 sprigs fresh mint leaves , a few sprigs
3 green chilies
1/2 inch gingerroot
1 tablespoon mango powder ( amchur ) or 1 tablespoon lemon juice
1/2 teaspoon red chili powder
Gobi Paratha, also known as cauliflower stuffed flatbread, is a popular Indian dish that is enjoyed across the country. It is a healthy and delicious bread, made by stuffing the filling of chopped cauliflower and spices inside the whole wheat flour dough. Instructions

1.In a mixing bowl, add the whole wheat flour and salt. Mix well and add water slowly to form a dough.
2.Divide the dough into equal parts and roll into small circles.
3.Boil the cauliflower until tender, chop it finely and squeeze out the excess water.
4.In a separate bowl, mix the chopped cauliflower with coriander leaves, mint leaves, green chilies, gingerroot, amchur powder or lemon juice, and red chili powder.
5.Place a portion of the cauliflower mixture in the center of each dough circle and seal the edges.
6.Roll out each circle into a flatbread.
7.Heat a griddle or a shallow frying pan over medium-high heat and add ghee.
8.Place the paratha on the pan and cook on both sides until golden brown, adding more ghee as needed.
9.Serve hot with yogurt, pickle or chutney.
