Ingredients

2 boneless skinless chicken breasts
3 1/2 ounces goat 's cheese , a firm variety
1 teaspoon fresh thyme , plus 2-3 sprigs
4 slices bacon , thinly sliced
2 zucchini , thinly sliced
1 1/2 tablespoons olive oil , plus extra for drizzling
8 ounces tomatoes , on the vine if possible , thinly sliced

Instructions

1.Preheat the oven to 200°C/ fan 180C/ gas mark 6.
2.Using a sharp knife, make a pocket into the thickest part of each chicken breast, taking care not to cut through the other side.
3.Season the inside of each pocket with salt and pepper.
4.Cut the goat's cheese into thin slices and layer them up with the thyme in each pocket.
5.Wrap each chicken breast with the bacon slices making sure the cheese and thyme remain intact.
6.Drizzle the chicken breasts with olive oil.
7.Arrange zucchini and tomatoes around the chicken breasts on a baking sheet and drizzle with olive oil.
8.Season zucchini and tomatoes with salt and pepper.
9.Add several sprigs of thyme to the top of the chicken breasts.
10.Roast in the preheated oven for 20-25 minutes or until the chicken is golden brown and cooked through.
11.Serve immediately.
