Ingredients

230 g ready-made flaky pastry dough
12 ounces leeks , cleaned , trimmed weight
8 ounces firm goat cheese ( rindless )
3 large free-range eggs , beaten
7 fluid ounces creme fraiche or 7 fluid ounces double cream
4 pink shallots , trimmed and finely diced
salt
fresh ground black pepper
This Goat's Cheese, Shallot and Leek Tart is the perfect appetizer for a fancy dinner party or a special occasion. Instructions

1.Preheat the oven to 200C/400F/gas 6.
2.Roll out the pastry on a lightly floured surface to the thickness of a pound coin.
3.Line a loose-bottomed tart tin with the pastry, then prick the base all over with a fork.
4.Chill in the fridge for 30 minutes.
5.Bake the pastry blind (lining with parchment and baking beans) for 12 minutes until the edges are light golden and crisp.
6.Remove from the oven and carefully remove the baking beans and parchment.
7.Reduce the oven to 180C/350F/gas 4.
8.Wash the leeks well under cold running water and slice into rounds.
9.Melt the butter in a frying pan over medium heat.
10.Add the leeks and shallots and sweat gently until softened.
11.Remove and spread over the pastry base.
12.Crumble the goat cheese over the top.
13.Mix together the creme fraiche or cream with the beaten eggs and season well.
14.Pour over the cheese and leek mixture.
15.Bake the tart in the oven for 30-35 minutes until set and golden in colour.
16.Leave to cool for a few minutes before serving warm.
