2 large eggs , separated , plus
3 large egg whites

Instructions

1.Preheat oven to 375F. Coat a 2-quart soufflé dish with cooking spray and sprinkle with parmesan cheese.
2.In a medium saucepan, melt butter over medium heat. Whisk in flour and cook, whisking constantly, for 1 minute. Gradually whisk in milk, white wine, mustard, and anchovy paste until smooth. Cook, whisking constantly, until thickened, about 2-3 minutes.
3.Remove from heat and stir in goat cheese, thyme leaves, salt, and pepper until cheese is melted.
4.Beat 2 egg yolks in a small bowl until thick and lemon colored. Gradually whisk about 1/4 of the hot mixture into the yolks, whisking constantly. Pour the yolk mixture back into the saucepan, whisking constantly. Set aside.
5.In a mixing bowl, beat 5 egg whites until stiff peaks form. Gently fold about 1/4 of the egg whites into the yolk mixture. Then fold in the remaining egg whites until no white streaks remain.
6.Pour mixture into prepared dish and sprinkle with cheddar cheese. Bake for 35-40 minutes or until puffy and lightly browned.
