Ingredients

250 g shortcrust pastry , fresh of frozen
25 g butter
1 tablespoon olive oil
2 onions , sliced
1 medium potato , peeled and sliced
2 garlic cloves , crushed
2 tablespoons fresh thyme leaves
140 g goat 's cheese , broken into pieces
3 eggs
200 g creme fraiche

Instructions

1.Preheat the oven to 200°C (180°C fan)/400°F/gas mark 6.
2.Roll the pastry out and use it to line a 23cm/9in tart tin. Prick the base with a fork and chill while the oven heats up.
3.Melt the butter and oil in a frying pan over a medium heat. Add the onions and cook for 15-20 minutes, stirring occasionally, until soft and caramelised. Add the potato and cook for a further 5 minutes.
4.Add the garlic and thyme, season with salt and black pepper, and cook for another minute.
5.Scatter the goat's cheese over the base of the pastry case. Spoon the onion and potato mixture on top.
6.Beat the eggs with the crème fraîche. Season with salt and black pepper.
7.Pour the egg mixture over the tart. Bake for 30-35 minutes, until golden and set.
8.Serve warm or cold with a green salad.
