Instructions

1.In a mixing bowl, combine goat cheese, cheddar cheese, green onion, spinach, milk, and nutmeg. Stir in Simply Potatoes mashed potatoes until well blended.
2.Season mixture with salt and pepper, to taste. Add flour and egg, gradually stirring until well combined.
3.Using a scoop or spoon, form golf-ball size portions of the mixture into dumplings. Set aside.
4.In a large saucepan or Dutch oven, cook bacon slices over medium-high heat until crispy. Remove from pan and set aside.
5.Lower heat to medium, add olive oil to bacon fat. Add onion, red bell pepper, red pepper flakes, and garlic to the pan. Cook until veggies are tender.
6.Add milk, chicken broth, bay leaf, allspice, and butter to the pan, stirring until well mixed.
7.Slowly whisk in flour, salt, and pepper, stirring occasionally until well blended and thickened into a gravy.
