Ingredients

1 package dried calimyrna figs , stemmed and chopped
1 3/4 cups water
3 tablespoons sugar
1 tablespoon fresh lemon juice
12 slices raisin bread
8 ounces logs plain goat cheese , such as St. Tola
2 tablespoons milk
fresh chives , sprigs cut into 1/2-inch pieces , for topping

Instructions

1.Bring the chopped figs, water, sugar and lemon juice to a boil in a medium saucepan over medium-high heat. Reduce the heat to medium-low and simmer, stirring occasionally, until the mixture is thick and syrupy, and the figs have broken down (about 15-20 minutes).
2.Toast the raisin bread slices gently under the oven grill. You can brush them with olive oil or melted butter if you like.
3.In a small bowl, warm the goat cheese and milk together in the microwave or in a saucepan over low heat, until the cheese is soft and slightly runny.
4.Spread a generous layer of warm goat cheese on one slice of each piece of raisin bread.
5.Spoon the figs over the goat cheese, dividing the mixture evenly among the sandwiches. Top with the remaining slices of bread.
6.Cut the sandwiches into 2 or 4 pieces. Press a few chives sprigs onto the bread slices and serve immediately.
