Ingredients

1 cup plain all-purpose flour
1 pinch salt
1 large egg
1 egg yolk
1 1/4 cups milk
1 tablespoon melted butter
1/4 teaspoon ground cardamom
1 1/2 cups freshly grated coconut
3/4 cup chopped roasted , unsalted cashews
8 tablespoons muscovado sugar ( or dark brown sugar or jaggery )
1/4 teaspoon ground cardamom
2 tablespoons golden raisins , chopped ( sultanas )
3 -4 tablespoons vegetable oil
1 juicy lemon
Goan Coconut Pancakes are a popular breakfast item in the southwest state of Goa in India, a popular tourist destination. Instructions

1.In a mixing bowl, combine the flour and salt.
2.Beat in the egg, egg yolk, milk, melted butter, and 1/4 tsp ground cardamom until the batter is smooth.
3.Add the grated coconut, chopped cashews, muscovado sugar, 1/4 tsp ground cardamom, golden raisins, and lemon juice to the batter and mix until well combined.
4.Heat a non-stick skillet over medium-high heat and lightly brush it with vegetable oil. Pour 1/4 cup of batter onto the skillet for each pancake.
5.Cook for 1-2 minutes until bubbles start to form on the surface of the pancake, then flip it over and cook for another 1-2 minutes, or until both sides are golden brown.
6.Serve the pancakes warm with butter or syrup.
