1 lb peeled potatoes ( russet or Idaho ) or 3 large potatoes ( russet or Idaho )
1 large egg , beaten
1/4 cup fine grated parmesan cheese
1 teaspoon salt
1/4 teaspoon white pepper
1/2 teaspoon xanthan gum
1/4 teaspoon nutmeg
1 1/4 cups bob 's red mill all purpose gluten-free flour
1/2 cup gluten free rice flour , for dusting the surface

Instructions

1.Preheat the oven to 400°F (200°C)
2.In a large pot, boil peeled potatoes until tender.
3.Drain and mash the potatoes using a potato masher.
4.Add beaten egg, salt, white pepper, nutmeg, xanthan gum, and finely grated parmesan cheese to the mashed potatoes. Mix well.
5.Add the gluten-free flour gradually and knead the dough until it holds together and forms a ball.
6.Dust a clean surface with rice flour and divide the dough into six pieces.
7.Roll each piece into long ropes and cut into 1-inch pieces.
8.Roll each piece with a fork to make ridges.
9.Bring a pot of salted water to boil and add the gnocchi. Cook for 2-3 minutes until they float to the surface.
10.Drain and toss with your favorite sauce before serving.
