Ingredients

1 tablespoon olive oil
1 onion , chopped
1 red pepper , deseeded and finely chopped
1 garlic clove , crushed
1 can chopped tomatoes
1 lb gnocchi
2 ounces basil , leaves torn
3 ounces mozzarella cheese , torn
This Gnocchi and Tomato Bake is an ultimate comfort food dish that originates from the northern regions of Italy. Instructions

1.Preheat the oven to 180C/350F.
2.Heat the olive oil in a large frying pan over medium heat. Add the onion, red pepper, and garlic and cook for 5 minutes till it turns soft.
3.Pour in a can of chopped tomatoes and bring to a simmer. Add salt to taste.
4.Add the gnocchi to the pan and mix it well in the sauce. Transfer the mixture to a large ovenproof dish and spread it out evenly.
5.Tear the mozzarella cheese into pieces and sprinkle it over the gnocchi mixture. Add a few torn basil leaves on top of the cheese layer.
6.Place the dish in the oven and bake for 20-25 minutes, till golden brown on top.
