Naan is a popular Indian flatbread that is often served as a side dish with curry or other spicy dishes. This version of naan is gluten-free and made with rice and tapioca flour instead of wheat flour, making it safe for people with gluten allergies or sensitives. The addition of yogurt and active dry yeast provides a tangy flavor and helps to make the bread rise without gluten. This naan has a slightly different texture and flavor compared to regular naan but is still delicious and perfect for scooping up spicy sauces and curries.

Instructions

.In a small bowl, dissolve the yeast and sugar in the warm milk and let it sit for 5 minutes.
.In a large mixing bowl, whisk together the rice flour, tapioca flour, xanthan gum, salt, and baking powder.
.Add the yeast mixture, beaten egg, yogurt, and oil into the mixing bowl with the dry ingredients.
.Mix until a dough forms and knead the dough for 5-7 minutes.
.Lightly oil a bowl and place the dough in the bowl, cover with a damp cloth, and let it rise for 1 hour.
.Preheat a non-stick pan or tawa (flat iron griddle) on medium heat.
.Divide the dough into 6-8 pieces and roll each piece into a ball. Flatten each ball with the palm of your hands.
.Sprinkle a little rice flour onto a board or plate, and roll out each piece of dough into a 6-8 inch circle.
.Place each rolled-out naan onto the hot pan and cook for 1 minute on each side or until golden brown.
.Optional: Brush with ghee or olive oil for extra flavor.
