Ingredients

300 ml heavy cream
1 tablespoon powdered sugar icing ( see note )
1/2 teaspoon ground cardamom
3 mandarin oranges , unpeeled
6 eggs
2 cups almond meal
1 cup caster sugar
1 teaspoon baking powder ( see note )
1 teaspoon vanilla essence
1/2 cup caster sugar , extra
1/4 cup mandarin juice ( fresh )
1/4 cup water
ground cardamom , extra , to serve
melted butter , to grease
This Gluten-Free Mandarin & Almond Syrup Cake is a delightful and healthy treat for any occasion. Made with simple and natural ingredients such as almond meal, fresh mandarin oranges and fragrant cardamom, this cake is gluten-free, low-carb and full of flavor. Perfectly moist from the juicy oranges and rich from the nutty almondy texture, it’s a must-try recipe for anyone looking for a healthy dessert alternative. The sweet syrup and cardamom icing on top make it even more special.

Instructions

1.Preheat oven to 160° Celsius. Grease a 24 cm springform cake tin with melted butter. Dust with almond meal. Line the base with baking paper.
2.Using an electric mixer, beat eggs and sugar until thick and pale. Add almond meal, baking powder and vanilla essence. Mix well.
3.Slice the mandarin oranges into 5 mm thick rounds and remove seeds. Add to the cake mixture and stir to combine.
4.Pour the mixture into the prepared tin and bake for 1 hour or until a skewer inserted into the cake comes out clean.
5.Meanwhile, make the syrup by combining the extra sugar, mandarin juice, water and cardamom in a saucepan over medium heat. Stir until the sugar has dissolved. Bring to a simmer, then reduce the heat to low. Cook for 10 minutes or until the syrup has thickened and reduced by one third.
6.Spoon the syrup over the hot cake.
7.In a small bowl mix together powdered sugar icing and cardamom. Sift over top of the cake.
8.Serve with mandarin segments if desired.
